Hey everyone! I’d like to know what your top super quick prep homemade snacks are? So nothing commercially bought or protein shakes. I’m looking for things like cutting up an apple and dipping it in peanut butter sprinkled with cinnamon or a half an avacado sprinkled with cayenne pepper. Basically something that’s healthy quick and can fill the gap between meals and after workouts. We all have busy lives and it’s so easy to grab something that’s pre-made and filled with all the wrong things so I’d like to compile a list of my favorites to share with everyone!

While it’s not as impulsively quick as picking up and slicing an apple ‘to go’, I really do love having a tray full of date-lemon-bran squares on standby in the kitchen for whenever a sweet-tooth or low-energy craving kicks in….typically just in time for a run:-) Incredibly simple and 100% natural ingredients, they’re packed to the punches with energy, naturally sweet and refreshing, and are absolutely LOADED with nutrients and much-needed minerals to help you stay fit and healthy. The bran binder helps give them some meaty texture to the teeth without having any of the tiring effects of traditional flour or gluten-based squares.
Recipe? Thanks to the naturally sticky and sweet miracle that are “dates”, it couldn’t be simpler, really! Hardly any ingredients and minimal prep:
Break packaged of dry (pitted) dates down a bit by hand first, then place in medium saucepan over low to medium heat. Just enough to help them break down. Squeeze 1 full lemon and pour in half a cup of water (or Orange Juice if you don’t mind extra sugar…adds a nice balanced citrus kick to the lemon); and let the dates ‘melt down’ into the liquid mixture. Allow to reduce. Gently fold in half a cup of bran + 1/4 cup of almond flour (I make this myself, using oven-toasted almonds in a blender until a crunchy flour consistency). Turn heat down to low, just enough to allow bran and almonds to absorb any residual liquids and ‘cook’. By folding you’re creating delicious pockets of layers of bran, date ‘goo’ and almond crunch. Spread mixture into a glass casserole and chill in fridge.
Slice into squares and go!

One of my favourite easy and pretty healthy go to energy snacks is simply a tablespoon of natural peanut butter (gotta be chunky!) spread inside a pita or tortilla wrap and then a banana on top. Roll that bad boy up and you have a quick nutritious snack with some good protein, carbs and fats! #NomNomNomNomNom

My go to is usually Greek yogurt and granola with almonds. Or if you’re not a yogurt fan, the almonds alone are perfect!

My fave are Bananas dipped in peanut butter…I use Peter Pan Honey Roast Creamy to be exact. 🙂
